When I made this wrap I was feeling very lazy, but my dad asked me to make him something ‘meaty’ for lunch. This was only day two of no meat! While he ate this wrap, I told him to pretend the cauliflower was chicken. He said it did the job!

Ingredients
- 2 cups cauliflower florets
- 4 whole wheat wraps
- 3 tbsp olive oil
- 1 tbsp cumin
- 1 tbsp salt
- 1 tsp smoked paprika
- ½ cup black beans
- 2 ½ tbsp chopped peppadews
- 1 cup cucumber
- 1 cup chopped kale
- 4 tbsp Hummus
- 1 cup Rosa tomatoes, halved
- Siracha mayo
Method
- Toss the cauliflower in 2 tablespoons of olive oil, cumin, salt and paprika. Roast at 200 °C for 15 minutes, or until charred.
- Coat the chopped cake with salt and pepper and ½ tbsp of olive oil and rub it in.
- To assemble the wrap. On a gas hob, place the wrap on the open flame for 10 seconds on each side. (If you do not have a gas stove, you can microwave your wrap for a few seconds to get it soft)
- Smear a tablespoon of hummus onto the middle of the wrap, then start to build you’re your wrap up with cucumber, tomato, kale, black beans, peppadews, then the roasted cauliflower.
- Drizzle with Siracha mayo the wrap it up and Enjoy!
